火锅丸子里的鱼丸很受欢迎,其实想吃了可以自己做,不要去买了,自己做真材实料,比买的好多了,一点添加剂也没有,鱼肉真实看得见。

做鱼丸还要解决一个问题,那就是如何去腥,鱼本身是一种腥味很大的食材,若是只把鱼肉打成泥肯定不行,做出的鱼丸腥味大的吃不了。
下面我来给大家分享一下 *** 鱼丸的 *** ,有一个小技巧在里面,学会这么做,再也不担心自己做的鱼丸难吃了,一看就会做,抓紧做起来吧,学会了做给家人尝尝,特别是有孩子的话,一定要学会哦,多吃鱼丸对孩子成长有帮助。
做法如下:
准备一条新鲜鱼,要用那种非常肥厚的鱼肉,如果不喜欢有刺,那就买没有小刺的鱼,比如鲅鱼,或者处理鱼肉的时候小心地把刺去掉,若不想麻烦的话将鱼皮去掉,鱼肉切小块就可以了,待会儿直接打成泥,稍微能吃到一点刺,不过影响不是很大,不太介意的朋友可以试试这么做。
活鱼让老板杀好简单处理一下,拿回家后不要冷藏或冷冻,要趁着新鲜劲把鱼方方面面处理干净,再用流动水冲洗控水。
用刀把鱼肉片下来,鱼皮去掉后把鱼肉切成大块一点的块,生姜切丝、葱切丝放进碗内,再加少许干花椒,加开水浸泡一段时间,水凉下来后用手抓揉几下,让葱姜花椒水变得更浓郁一些。
鱼肉倒进破壁机里,先加少量葱姜花椒水,把鱼肉打成细腻的鱼泥,再打的过程中少量多次的加葱姜花椒水,一直打到鱼泥看起来非常粘稠起胶的状态。
然后再加一两个蛋清进去,继续反复搅打,打好的鱼泥变得顺滑了许多。
把鱼泥倒进干净大碗内,加少量木薯淀粉和少许食盐,下手摔打,一直处理到鱼泥黏性很大成坨就好。
接着给锅里加水,开火煮到水有温度的时候调小火,用手抓一些鱼泥从虎口挤出丸子,再用勺子将丸子放进锅内。
一直保持小火,煮出浮沫后要撇掉,持续煮五分钟捞出,想要Q弹的口感记得捞出放冰水里浸泡一下,这样鱼丸就做好了,吃起来鲜嫩Q弹非常美味,自己做的放心吃。
做鱼丸,记住一个小技巧:打鱼泥的时候要加葱姜花椒水,这样做出来的鱼丸更嫩,也更鲜美无腥味。
另外煮鱼丸的时候只是为了塑性,一定不要开大火,否则大火煮出的鱼丸口感不好,保持小火煮熟即可,这一点别弄错了。

我给朋友做的这款鱼丸是非常Q弹的爆汁鱼丸!鲜嫩的鱼肉包裹着扎实的猪肉馅,真材实料无添加,喜欢吃鱼丸的小伙伴千万不要错过!

300克巴沙鱼、80克猪肉、
80g红薯淀粉、生姜、香葱
盐、糖、白胡椒粉、香油
300g巴沙鱼柳切成小块。
葱姜抓一抓,做一个葱姜水(葱段、姜丝、40g清水)
料理机放入鱼块、1个蛋清、半勺盐、40克葱姜水,多打一会让鱼肉上劲。
再加入80克红薯或者木薯淀粉搅拌均匀。
再来调个内馅,我用的是猪肉末(80克猪肉、加半勺盐、半勺糖、半勺胡椒粉、1勺香油、1勺葱花搅拌均匀)
手要沾湿才不会黏,舀一勺鱼肉,摔打盘圆,包入猪肉馅,完成!
包好的鱼丸放到冷水锅里保存,开大火把水煮开再煮两三分钟就熟了!
鱼丸煮好放入凉水中会更Q弹。
