15. 大火翻炒均匀,加入食盐,鸡精,和蚝油简单调味
16. 再次炒匀,沿锅边淋入水淀粉
17. 炒匀在加入一勺生抽,翻炒均匀

自从学会做鸡蛋泡泡后,我家三天两头做一次,可以把鸡蛋泡泡当成早餐,或者是小零食,一口一个,越吃越过瘾!其实鸡蛋泡泡的做法很简单,只要是家里有鸡蛋、面粉、酵母和白糖,用筷子搅一搅,然后上锅一炸,这样鸡蛋泡泡吃起来特绵软,虽然是油炸的,但是里面不吸收油分,营养不说,吃起来还特香!好了不多说了,下面我就把鸡蛋泡泡最详细的做法介绍给大家。
——【鸡蛋泡泡】——
【 *** 食材】:鸡蛋2个、1小碗面粉、酵母粉3克、火腿肠1根、香菜1棵、盐2棵、五香粉2克

【步骤一】:取一个盆,打入2个鸡蛋,放入酵母粉,然后用筷子搅散,把酵母搅化。
【步骤二】:把准备好的面粉放入盆中,然后倒入适量的清水,这个时候要用筷子边倒边搅,防止水放多了,然后给它搅成面糊,面糊一般筷子能够挑起来,往下流而不是往下滴就可以,然后盖上保鲜膜放暖和的地方发酵1个小时。
【步骤三】:把去皮的火腿肠改刀切成小粒,香菜切成末装盘备用。
【步骤四】:面糊发酵1个小时,差不多一倍大就好。
【步骤五】:把发好的面糊用筷子不停地搅拌,把气排掉,然后放入火腿肠粒和香菜末,再放入少许盐和五香粉。
【步骤六】:然后用筷子不停搅拌均匀,让食材、调料和面糊充分融合。
【步骤七】:把搅拌均匀后的面糊放入准备好的食品袋中,用手把面糊挤到袋子的一个角,然后用剪刀把角剪掉,能够把面糊挤出来就可以。
【步骤八】:锅中放入宽油烧热至5成热,也就是筷子放里边周围开始起泡泡就可以,然后把面糊挤出来,大小差不多和丸子大小就可以,然后用筷子给它夹断,放入锅中开炸,每次放入不要太多,好给面糊球喷张的的空间。
【步骤九】:面糊球炸膨胀定型,全部飘起来,然后开小火慢炸,把鸡蛋泡泡炸熟、炸透。
【步骤十】:鸡蛋泡泡炸熟,开始变黄,然后捞出来,开大火把油温重新烧至6成热,把炸好的鸡蛋泡泡倒入锅中复炸10秒钟,把鸡蛋泡泡炸至表皮金黄捞出来,控干油后装盘,撒点自己喜欢的椒盐面开吃啦!
