【步骤一】:把金针菇切掉老根,清洗干净撕开、豆腐改刀切成三角形块,然后分别装盘。
【步骤二】:大蒜拍碎剁成蒜末、香葱葱白和叶子分开切成末、香菜切成小段、泡生姜也切成末、泡辣椒切成段,方分别装盘备用。
【步骤三】:锅中添水烧开,把金针菇放入锅中焯水30秒钟、捞出来放入冷水中泡冷。
【步骤四】:金针菇泡冷捞出来把水挤干放盘子中,同时把黄瓜切成小块,放金针菇上。
【步骤五】:锅中放入少许油,把豆腐放入锅中,用小火把豆腐煎成两面金黄。
【步骤六】:豆腐煎成两面金黄,捞出来摆放在黄瓜上备用。
【步骤七】:重新起锅中放1勺油烧热,放入泡生姜、泡辣椒、花椒、葱白、蒜末、豆瓣酱,开小火炒出香味,炒出红油。
【步骤八】:调料炒出红油,放入1碗水,同时放入2勺生抽、鸡精,大火烧开,放入一勺淀粉水,把汤汁稍微收浓,把酱汁勾一层薄芡。
【步骤九】:酱汁稍微收浓,放入1勺花椒油和2勺红油,搅拌均匀,把酱汁倒入豆腐中,撒上香菜和葱末,上桌开吃啦!
