食材:普通家庭面粉500g,25度温水600ml,盐2g,葱花适量,食用油适量。

面团和好后是非常软的,这样烙出来的饼口感会非常好。
锅内热油,下入葱花炸焦,炸出香味后捞出葱花。
把热油倒入两勺面粉中,油酥就做好了,晾凉备用。
这样做出来的葱油饼容易起酥起层,擀饼的时候又容易流出来。
把面团擀成一张薄饼
撒上葱花,在饼的上下边分别切上几刀
把饼这样叠起来
把饼擀成大约一厘米左右的厚度
平底锅小火烙,中途翻几次面,直到两面金黄就可以出锅了。

即使你不吃葱,香喷喷的葱油饼你一定会吃。咬上一口,葱香扑鼻,饼皮柔软又筋道,这味道,上头!今天小易来跟大家分享葱油饼的做法,其实要做好并不难,但也有需要注意的地方。来看看吧。
所需食材:
面粉、食盐、鸡蛋、五香粉、青葱、老葱头、姜片、八角一个、香叶两片、大葱一根
*** 步骤:
之一步:把400克普通面粉放进大碗中,再加入2克盐,打入一个土鸡蛋,稍加搅拌后,加入适量80度的热水和面,搅拌成絮状后,加入15克放凉的熟油,然后揉成团,盖上盖子让面团松弛一个小时。(也可以在碗中抹一层油,这样方便松弛好的面团取出)
第二步:熬制葱油。准备青葱、老葱头、姜片、一个八角、两片香叶、一根大葱,锅烧热后加入食用油,待油温微微热放入所有配料小火慢熬,期间多翻动让受热均匀。炸至葱变焦黄,然后捞出杂质,把熬好的油放凉备用
第三步:把葱切成葱花,根据个人口味加入少许盐和五香粉,再倒入少许晾凉的葱油,拌匀备用
第四步:取出休息好的面团,不要揉,整成条切剂子,把剂子拉开后擀薄或者整薄。然后抹上葱油,像折扇子一样折好,再边拉长边卷,最后把尾巴收好。再次松弛10分钟左右
第五步:松弛好后,取出之一个卷好的剂子,擀成大薄饼,依次擀好剩下的剂子
第六步:电饼铛预热后刷上准备好的葱油,盖上盖子开大火烙十几秒,然后翻面再烙几十秒,烙至表面微黄就可以出锅了
*** 关键点:
1.熬制葱油的时候,如果配料上有水没有沥干,请小心油溅。
2.葱油饼烙好后可以根据个人口味撒上椒盐等调料,味道更丰富。

葱花是一种很有魔力的调味剂,平平淡淡的食物中,撒上一点葱花,立马就变得有滋有味,颜值和口味都上了一个层次。尤其饼,葱花饼比普通的面饼好吃可不是一点点呢!由于做法的不同,葱花饼的味道也是各有千秋,今天小易分享一个美味又正宗的葱花饼做法,喜欢的要收藏哦!
所需食材:
普通面粉400克、盐3克、开水100克、凉水110克、鸡蛋1个、小葱、猪油、花生油、食用油
*** 步骤:
之一步:碗中准备400克普通面粉,再加入3克盐拌匀;接着一半用100克刚烧开的水烫面,一半用110克凉水和面,和好后充分拌匀;然后往面粉中打入一个鸡蛋,搅散后下手充分揉匀;最后盖上保鲜膜松弛10分钟。
第二步:一把小葱切成葱花;小碗中加入一勺猪油隔热水融化,接着再加入和猪油等量的花生油,充分搅拌均匀备用。
第三步:取出松弛好的面团继续揉匀揉光滑;接着把面团搓成条揪剂子(每个剂子70克),然后把剂子再次揉匀备用。
第四步:取之一个揉好的剂子搓成条,再擀成长方形的面皮;接着在面皮表面均匀地抹上油,并撒上葱花;然后把面皮按照三等分叠好,再在表面刷好油,叠放在一起并盖上保鲜膜松驰15分钟。
第五步:把松弛好的剂子拉开,再两边对称着卷起,卷好后重叠起来并按扁;然后把做好的生胚放到盘中,盖上保鲜膜自然松弛至少半天;也可以之一天晚上做好生胚松弛一夜,第二天早上起来做。
第六步:取出松弛好的生胚按扁(也可以直接擀成大薄饼)。
第七步:锅里刷上适量食用油,放入生胚,一面烙至定型后翻面,烙制期间请多翻面,使饼受热均匀;两面都烙至金黄、表皮变得酥脆即可出锅。

面团一定要充分搓揉到位,做好的剂子也要醒发足够的时间,这样做出来的饼吃起来口感才会更好。
