【老坛芝麻蟹准备食材】
主料:肉蟹1只、花甲200克

【老坛芝麻蟹 *** 步骤】
一 收拾海鲜
好吃的美食选择食材是之一步,如果食材没有买好等于味道减少一半,肉蟹怎么挑选?秋季的螃蟹是最为肥美的时候,公蟹要在九月份之后最为肥美。肉螃蟹也是有分河蟹还有海蟹的,河螃蟹的背部比较圆,海螃蟹背部是尖的,海螃蟹的个头一般都比较于河螃蟹要大,所以海螃蟹的可食用部分要多,大家要想挑选好吃的海肉蟹,可以选择一些带有绒毛的,这样的螃蟹肉质要多上一些。
看看螃蟹是否是肉螃蟹不止是看它的大小,还可以掂掂它的重量,因为螃蟹被打捞之后,除了水就接触不了其它的营养物质了。看看螃蟹是不是有活力的,人们在挑选肉螃蟹的时候,更好是选择有活力的螃蟹。
既然是海鲜那么在选择肉蟹的时候我们也应该选择海里的螃蟹,你可以选择梭子蟹也可以选择面包蟹。选好之后用自来水冲洗一下,然后把螃蟹拆开成3份,两只蟹钳各算一份蟹身算一份。
螃蟹收拾好后准备一个盆,在里面倒入多一下土豆或者玉米淀粉。我们把冲洗完还湿润的螃蟹裹上淀粉,待会要用油炸一下这螃蟹才会更香。花甲在焯水之前要放入高浓度盐水中浸泡一下,这样体内的沙土才会被吐出来。
吐过沙土后的花甲放在盆中,锅里烧开水后把花甲下入锅中。很快花甲就自动打开了,我们用开水焯上约2分钟就可以把花甲盛出过水冲掉里面的脏东西备用。
二 熬煮汤汁
两种海鲜收拾好了接下来就是炸螃蟹和熬煮汤汁,准备一口锅在里面倒入多一些的色拉油。起锅烧油下入筷子观察,当筷子表面冒泡速度很快时油温大约是6成热,这时就可以把裹住淀粉的螃蟹下锅炸。这个过程为的是让螃蟹香味更浓,炸的时间控制在2分钟即可,炸好后螃蟹捞出控油放入盆中。
把锅中多余的油掉入别的容器留住100克左右的色拉油,烧热后倒入泡椒沫50克、蒜沫30克、姜沫40克。火调成中火进行翻炒,翻炒出香味后倒入清水准备熬煮汤汁。当汤汁烧开后焖煮5分钟,这汤汁就入味了。
三 焖煮出锅
入味后先关火,在盆中放入不锈钢滤网把锅中的汤汁倒入盆中滤掉残渣。在向干锅中加入半勺色拉油烧热,下入洗干净切好的酸菜和泡椒段,倒入姜片煸炒出香味。把盆中准备好刚才的汤汁一并倒入锅中,开大火把汤汁烧开。
这时我们下入切好的年糕,和青笋片。年糕的加入让这道菜吃起来发甜有嚼劲,下入青笋片煮上2分钟就可以下入炸过的肉蟹和焯水后的花甲了。盖上盖子调成小火进行约10分钟的焖煮,锅里的年糕、花甲等都会被煮熟,煮熟后把整锅菜倒入盆中。
在另一个炒锅中倒入半碗色拉油,烧热后把去壳的白芝麻炸香。在把炸香后的芝麻连同热油浇在盆中的螃蟹上,一道香气扑鼻创意满满的佳肴就做好了。寒冷的冬季请朋友们围上一桌,美美的吃上一顿别提多享受了。如果你也想品尝如此美味,不妨买上原材料自己学着在家中烹饪一下哦。
【老坛芝麻蟹总结】
1.花甲中会含有许多沙子,需要在盐水中浸泡几个小时才能让沙子吐出来。或者你直接在海鲜市场买浸泡好的花甲。
