又到了做腊肉的季节,广东人做腊肉都会选择在北风天,而且需要比较低的气温,才能做出漂亮好吃的腊肉来,那么广式腊肉是怎么做的呢?

今天铁头就来跟大家分享一下详细做法,附带我们客家人的五味酒详细配方,往年 *** 腊肉视频时,很多网友一直问我,我用的五味酒是用什么香料泡的,今天就一起告诉大家。

食材准备:五花肉15斤,120克食用盐,白酒100克,80克白糖,一斤五味酒,半斤生抽。(五味酒材料:桂皮50克,小茴50克,八角50克,豆蔻20克,香叶20克,丁香20克,3斤45度的白酒。)

详细做法步骤如下:

之一步:先来跟大家分享五味酒的做法,准备材料:桂皮50克,小茴50克,八角50克,豆蔻20克,香叶20克,丁香20克,3斤45度的白酒。

第二步:把香料拿去用破壁机全部打碎,打成粉末,这一步可以叫药店的老板代劳,打好的粉末直接放入无水无油的玻璃罐中,再往里面加入3斤45度的白酒,盖上盖子摇晃一下,然后放一边让它泡上两个月才用,这样味道才能出来,泡好的五味酒,无论是用来做腊肉或者是平时焖肉,都可以加上点,味道非常香哦。

第三步:现在来正式做腊肉了,准备15斤五花肉,肥瘦相间的最合适,五花肉不用洗,碰了水容易变坏,直接把猪毛刮干净就行,然后切成大小均匀的条,宽度大概2.5公分左右。

第四步:五花肉切好把它转到大盆中进行腌制,15斤的肉中,加入120克的食用盐,白酒100克,再加80克的白糖,把它们充分的搅拌均匀,配料的用量也不是绝对的,可以按照个人的口味来增减,要多给它搅拌一下,让每一块猪肉均匀的裹上调味料。

第五步:翻拌均匀后,把五花肉压紧实一点,然后盖上一个锅盖让它腌制24小时。

第六步:五花肉腌制了有一天了,现在拿棉绳子把它穿起来拿去晾晒,用根筷子在五花肉一头戳一个洞,再把棉绳穿过去打个结,可以把肉挂起来就行。

第七步:全部都穿好后,就可以拿去晒了,挂在通风处晾晒就行,可以不用太阳猛晒,但一定要在温度比较低的情况下做腊肉哦,天气太暖做不好腊肉的,让它晾晒一天,把表面的水分给晾干就行。

第八步:腌制好的五花肉晾晒一天,把表面的水分晾干后收回来,准备一个无水无油的锅,锅中倒入一斤的五味酒,这个五味酒是之前用剩下的,再加上半斤的生抽,加进去之后先调大火把它们烧开,五味酒和酱油烧开后把火调至最小,接着把我们的五花肉一块一块放进锅中给它过一遍,让它全部沾上酒和生抽,时间不用太长,让它裹满就可以了。

第九步:裹好五味酒和酱油的五花肉摆放到大盆中,再把锅中剩余的五味酒均匀地淋在上面,淋好后再盖上盖子,把五花肉再腌制一个晚上。

第十步:又腌制了一个晚上的五花肉,我们再次把它挂起来,挂好后让它晾晒一个星期左右就行了。

这一款广式腊肉做好了,客家传统风味,香味十足,干香好吃不油腻,无论是用来炒、蒸、炖、煲等,都非常好吃,越嚼越香,越吃越有味道。

四川腊肠的家常做法

一、食材准备

精猪后腿肉20斤、高度白酒200克、白糖300克、辣椒面60克、五香粉10克、胡椒粉10克、花椒粉55克、食盐180克。

二、 *** 流程

1、将猪后腿洗净去皮后,切成片放入容器,倒入备好的白酒、白糖3、辣椒面、五香粉、胡椒粉、花椒粉、食盐等搅拌均匀。

2、将刮去油洗净的猪小肠衣套在绞肉机的专用套管上,然后将搅拌均匀的肉放在绞肉机的托盘上,启动绞肉机开始加工成长条腊肠。

3、将加工好的长条腊肠分成基本均匀的小段,挂到阴凉通风处风干,一周后上笼蒸1小时即可食用。
