相信每一个华人对蛋炒饭这道家常美味都非常熟悉。记得小学劳动课,老师教的菜除了番茄炒蛋,就是蛋炒饭了。
然而近日我在油管(YouTube)看到一条马来西亚博主用幽默的大马英文吐槽BBC美食频道当家主持人帕特尔(Hersha Patel)的蛋炒饭教学视频,让人震惊之余,更是哭笑不得!
视频当中,帕特尔一开始就米都不洗就直接倒进了锅里煮了,看得让人瞠目结舌。大马博主直接掩面惊呼:“你怎么不洗米就开始煮饭了?”

但最奇葩的是帕特尔在米饭煮熟后,直接把米饭倒入滤网滤干。大马博主直指“她是在做意大利面吗”。然后,还有一波神操作,那就是,帕特尔沥水之后,还再用凉水给米饭“过冷河”。此时,我整个心都和冷水一个温度了,不禁问道:“这饭还能吃吗?”

看完这段视频,我终于明白为何英国的食物总是被世界嫌弃,美食节目尚且如此,还是一生做好一道“炸鱼薯条”好了。

虽然说英国美食节目主持人错误示范了蛋炒饭操作。但一盘高水准的蛋炒饭也绝非想象中简单。我们最家常的做法是用隔夜饭去炒,主要因为隔夜饭表面的水分差不多都挥发了,饭身会干爽很多,这样炒出来的蛋炒饭才会一粒一粒的,晶莹剔透。

开炒的之一步,先把鸡蛋加盐打散备用。然后把锅烧干再放油,待油温加热到七成,打入鸡蛋,快速翻炒。
我个人的做法是出蛋花之后,就直接把鸡蛋盛出来备用。然后放入米饭,待米饭炒散成一粒一粒,再倒入鸡蛋,然后用大火一起翻炒至颜色均匀即可。这样做的原因是,我想蛋更滑一些,如果直接倒米饭去炒,鸡蛋就会太熟太老。

当然,如果喜欢鸡蛋有种干脆的感觉,也可以直接把鸡蛋炒成小粒状之后,再倒入米饭翻炒。期间,有人也会加入半勺生抽,调色调味。但我个人觉得蛋炒饭讲究的是干身,所以我一般都不会加生抽。
最后撒上葱花,装饰一下就色香味美了。当然,也可以根据个人喜好加入火腿粒,腊肠或者青豆之类一起炒,这样出锅的炒饭色彩更加缤纷,口感也更有层次。

但也有一种鲜为人知的传统 *** 。那就是将水煮开沸腾后,将洗干净的米倒入水中过滤一下下再捞出。然后,将米放锅里蒸熟之后,再与鸡蛋混在一起炒。这样做出的蛋炒饭,不仅米饭香和蛋香不会混合,而且米是一粒粒分开,不会粘在一起。

此外,还有一种 *** 就是可以在炒之前就把米饭放在蛋液里均匀搅拌,然后再一起炒直至米粒松散开来,粒粒金黄。
蛋炒饭如此家常,但你们可知道蛋炒饭的历史也非常悠久吗?
蛋炒饭最早的起源可追溯至隋朝。据说,当时的越国公杨素爱吃碎金饭(即蛋炒饭)。其做法是将鸡蛋炒成细丝夹杂在一粒一粒的米饭中。但纤细如丝的蛋丝不能与一粒粒的米饭相牵连,还要保证每一粒米饭都必须裹上一层薄薄的油,约略呈透明状,看上去就像碎金一样。后来这种碎金饭就逐渐演变成为今天的蛋炒饭了。

提及炒饭,估计大家都会之一时间想到“扬州炒饭”。然而,扬州炒饭并不是诞生在扬州,而是美食之都广州---这个恐怕绝大多数广州人都不知道呢!
在清朝光绪年间,广州,有一家叫“聚春园”的淮扬菜馆,以虾仁、叉烧和海参 *** 出一道名为“扬州锅巴”的食物。其后有酒楼将锅巴改为炒饭,名为扬州炒饭,结果大受欢迎,扬州炒饭之名便广传开去,并在香港发扬光大。后来又被华人移民把这道炒饭带到世界各地。
